It all started when…

in 2013 Patricia Schwabe with her husband Ron Schwabe decided to bring the flavors of traditional Mexican cuisine to the old building in downtown Tucson that they were getting ready to renovate. The prevous Graham Brother’s shop became Penca,

Patricia grew up with the influence of her mother’s kitchen, a traditional Mexico City cuisine, full of flavors inspired by the pre-colombian ingredients, mixed with the influence of the Spanish and French.

Penca’s Executive Chef David Solorzano also grew up with deep traditions rooted in food from Central Mexico. His knowledge of the cuisine and ingredients have allowed for Penca’s menu to grow and develop.

Bryan Eichhorst, Beverage Director. Bryan has travel through Mexico searching for the best agave spirits from different regions. Bryan created the first Agave Bar in Tucson, bringing Mezcal, Sotol, Bacanora and other native spirits to Tucson and to our guests.

Starting February 1st, brunch will be served from 8am-3pm every Saturday and Sunday!
